Hello!

My name is Jen, and welcome to my kitchen! I’ve had a lifelong love/hate relationship with food – I loved to eat it, and hated portion sizes. As a totally-foreseeable result, I gained far too much weight, especially after getting pregnant. The whole “eating for two” thing isn’t exactly accurate, but that didn’t stop me from giving myself carte blanche to eat whatever I felt like, whenever I felt like it.

I was addicted to sugary, un-filling foods, and it showed. Oh of course they tasted great (and I’m sure they still do!), but after having kiddo #2, and hitting the wonderful age of 30, I thought “this is just how my body is now”. Felt like I wasn’t eating thatΒ bad, and that the reason I couldn’t lose weight was because of the aforementioned reasons – skin stretching, age, metabolism slowing, etc.

Then I discovered keto. I’m still new to it – 37 days in as of writing this post and starting this blog – but I’m in love. For the first time in my adult life, I’m full. I’m just straight up not hungry during the day, and it’s incredible. It feels like magic! Okay, some rephrasing. Of course I get hungry, but what I eat leaves me feeling satisfied. Before, I’d feel hungry, have a cookie or 6, still be hungry, and then have a large lunch. I just wasn’t eating the right way for me. For those that don’t know, a quick description of keto is a high fat, moderate protein, low carb diet. The fat leaves you feeling full, and after eating low carb (between 20-30 net grams/day) for several weeks, your body becomes what’s called “fat adapted” and you no longer utilize glucose for your primary energy – you use fat instead!

This is rapidly changing from a diet to a lifestyle change that I think is going to stick around for a long, long while.

This site is for snacks, desserts, and meals that I’ve either found or augmented to make keto-friendly, because I want everyone to have the success that I have. I have more energy, am actually beginning to like what looks back at me in the mirror, and I don’t feel like I’m dieting, which I think plays a big part.
