Zucchini Pizza Bites

So this is going to be a super quick post, because honestly there’s nothing to it, I just hadn’t thought of even doing this until I saw a picture of it online!Zuchinni Pizza Bites Insta.png

My family was having pizza for dinner, and man, I just want some. I love pizza, and when I have the time and ingredients on hand, I love making my cauliflower pizza crust so I can have an actual pizza to consume. Unfortunately, I was pressed for time, and feeling a powerful wave of laziness and not-wanting-to-clean-ness, so I opted for something I had seen recently – zucchini pizza bites!

It’s basically like a bagel bite, but instead of bagel, it’s zucchini. And instead of only eating 5, you can eat the entire tray I made and still be under 300 calories (though I did end up splitting it up over several days just to make them last longer).

Ingredients:

  • 2 medium zucchinis, cut into 1/2″ – 3/4″ medallions
  • 1/2 cup mozzarella cheese
  • 1/4 cup pasta sauce (you can cut things down by using low carb, but I wanted these something fierce and just used whatever Prego we had sitting in the fridge)
  • pepperonis (optional)
    • I only had standard-sized pepperonis, so I used 4 and cut them into pieces. You can save yourself a bunch of trouble and get the mini ones.

Directions:

  1. Preheat oven to 400F. Place medallions onto cookie sheet and season how you like (I used salt, pepper, and oregano). Bake for 10-12 minutes.20180317_174533
  2. Remove from oven and add pasta sauce, cheese, and toppings of choice to each medallion. I found that a 1/4 tsp worked pretty well to evenly distribute the sauce.20180317_180031
  3. Place back in oven and bake for an additional 5-7 minutes, or until the cheese has melted and turned into the gooey quality we all love from pizza.
  4. Done!

Easy, quick, and delicious. I do think I’ll bake the zucchini a little bit longer next time to try to get some more moisture out. Make it a bit of a firmer bite. Either way, it definitely satisfied my want for something pizza-related, without having to go to the trouble of making myself some kind of crust.
